Chocolate Coconut Flax Seed Pancakes with Raspberries

20:22

Breakfast is the most important meal of the day and most definitely my most favorite meal of the day as well. Something about breakfast food just makes me so happy, particularly pancakes and waffles. In this post though it is going to be about pancakes and one of my favorite ways to make them yummy and good for you!
They are my Chocolate Coconut Flax Seed Pancakes and they are de-li-cious. Had to break it down for you they are just that good. Here is my very own recipe for it. I admit often times I just do not have the time to make my pancakes from scratch (yes I am ashamed) so that is something you can do if your would prefer!

So you start with either your homemade pancake mix because you are just that amazing or if you are a cheat like me sometimes simply begin if your pre-made from a box mix but please ensure that it is whole wheat pancake mix not buttermilk or original..come on people we are trying to be healthy here.

So begin the mix of your pancakes and when you are done mixing them with the essential ingredients we can now being on making this mix extra good (do not worry in the future I shall post how to make pancakes from scratch but this is not just for the die hard healthy folk but also for the short-of-time-in-the-morning folk like myself)

You will need (for a recipe of 6 pancakes)

1 1/2 Tbsp Flax Seed
Shredded Coconut (unsweetened)
1 1/2 Tbsp of Baking Coco

Add these ingredients all into the already created pancake mix and mix it until totally blended. Then simply place the pancakes onto a lightly greased pan and be sure to check the base before flipping, these pancakes will not bubble to show you they are ready to flip. Then when you are done doing your pancake flipping magic and they are all done, with the pancakes you are ready to eat place dashes of brown sugar and a helping of raspberries and there you have it, a fiber and protein packed stack of pancakes! You are welcome to use other berries rather then raspberries but the beauty of raspberries is that they are not only full of vitamins but as well as natural fiber which is extremely beneficial to have in the morning!

Enjoy!
